
21 Jun Stir Fry Beef with Carrot, Ginger and Noodles

I had a lot of people asking me to share my beef with carrot, ginger and noodle stir fry recipe after I posted it on my Instagram story last week. So… here it is!
Ingredients
For The Marinade
- 200g beef, cut into cubes or slices
- 1 clove of garlic
- 1 tbsp of fresh ground ginger
- 1 chilli finely diced or 1 tbsp chilli flakes
- 3 tbsp dark soy sauce
For The Stir Fry
- 1 tsp of coconut oil
- 3 carrots (spiralised or peeled into thin strips)
- 1 red pepper sliced
- 1/2 courgette (spiralised or peeled into thin strips)
- 125g of egg/rice noodles
Method
- In a medium sized bowl, mix together all of the marinade ingredients. Leave to sit for approximately 20 minutes
- Heat a wok with the coconut oil at a medium-high temperature and add the marinade mix
- Stir fry until the beef is cooked to preference. Remove the beef from the wok, and leave to the side to avoid it becoming too dry
- Add the stir fry ingredients to the wok
- While the vegetables are cooking, add the noodles to a pot of boiling water and cook as per the instructions (approx. 4 mins)
- Add the noodles and beef back to the stir fry mix on the wok, and simmer for 2-3 minutes
- Remove from the heat ,garnish with chopped coriander and serve
