Stir Fry Beef with Carrot, Ginger and Noodles

I had a lot of people asking me to share my beef with carrot, ginger and noodle stir fry recipe after I posted it on my Instagram story last week. So… here it is!


For The Marinade

  • 200g beef, cut into cubes or slices
  • 1 clove of garlic
  • 1 tbsp of fresh ground ginger
  • 1 chilli finely diced or 1 tbsp chilli flakes
  • 3 tbsp dark soy sauce

For The Stir Fry

  • 1 tsp of coconut oil
  • 3 carrots (spiralised or peeled into thin strips)
  • 1 red pepper sliced
  • 1/2 courgette¬†(spiralised or peeled into thin strips)
  • 125g of egg/rice noodles
  1. In a medium sized bowl, mix together all of the marinade ingredients. Leave to sit for approximately 20 minutes
  2. Heat a wok with the coconut oil at a medium-high temperature and add the marinade mix
  3. Stir fry until the beef is cooked to preference. Remove the beef from the wok, and leave to the side to avoid it becoming too dry
  4. Add the stir fry ingredients to the wok
  5. While the vegetables are cooking, add the noodles to a pot of boiling water and cook as per the instructions (approx. 4 mins)
  6. Add the noodles and beef back to the stir fry mix on the wok, and simmer for 2-3 minutes
  7. Remove from the heat ,garnish with chopped coriander and serve
